With the leadership of Dr. Cesar V. Ortinero and with the assistance of Dr. Joel Salazar, this project's main objective is to generate data about pharmacological properties in mushrooms and functional foods based on mushrooms.
With the leadership of Dr. Cesar V. Ortinero and with the assistance of Dr. Joel Salazar, this project's main objective is to generate data about pharmacological properties in mushrooms and functional foods based on mushrooms. Extracts are subjected to in-vitro enzyme-based assays, specifically, alpha-amylase and alpha-glucosidase, cyclooxygenase (COX) 1 and 2, and angiotensin converting enzyme (ACE) assays to determine their anti-diabetic, anti-pain, and anti-hypertensive properties, respectively. This research may provide consumers with information on health-based food products. Data can also be supplied on developing local herbal medicines to possibly reduce the country's dependence on pharmaceutical products found abroad.
